Protein pancakes! 🥞 Makes 2 servings (6 pancakes) Per serving: 35.2g protein, 13.4g fibre, 473 cal I’ve been experimenting with protein pancakes for a while to try get the right macros for a high protein and fibre mix in there, as well as the texture still being fluffy and finally here they are! I like to meal prep these, store the extra portions in the fridge and eat them throughout the week! Or freeze a couple portions for an easy breakfast for another day! Wet: 300ml soy milk - I use @bonsoy 1/3 lemon 1 tbsp chia seeds 1 tsp agave 1 tsp vanilla extract Dry: 50g @Form Nutrition UK unflavoured protein 150g organic spelt flour 1 tsp baking powder 1/2 tsp baking soda Dash of salt * To a bowl add the soy milk, lemon and chia seeds, mix and leave to sit for 5-10 to turn in to “butter milk” * In a separate bowl add all the dry ingredients and mix * Once the soy milk as curdled combine the wet and dry mix, along with the agave and vanilla extract * Whilst lightly until combined (stir for as little time as possible) * Pan fry on medium low heat in a lil oil until golden each side. Around 3-4 mins each side, you’ll know when to flip in the pan as holes start to appear on the top side of the wet batter * Serve with your fave topping, I always go for yogurt and fruit!
