Zucchini casserole Fresh from the garden and onto your plate—this zucchini casserole is no joke. Whether served as a side dish or topped on a piece of crusty Italian bread, this is the only casserole you’ll be making all summer long! 3 zucchini (sliced thin) 1 large Vidalia onion (sliced into thin circles) 1 12 ounce package, Monterey Jack cheese 1/4 cup + 1/4 cup olive oil 3/4 cup 4C plain or seasoned breadcrumbs 3 tablespoons butter Preheat oven to 375°. Wash and peel zucchini. Slice in half and then into thin rounds. Place into the bottom of a casserole dish. Slice onion in half as well and into rounds and layer on top of zucchini. Drizzle with some olive oil. Season with some salt and pepper. Add Monterey Jack cheese, then top with breadcrumbs. Drizzle a little bit more olive oil and some pats of butter. Bake for 35 minutes. Enjoy as a side dish or right on top of some Italian bread! This will be your favorite way to serve zucchini!
