Cheesy Beef-Stuffed Zucchini Cups
Ingredients
For the zucchini:
* 3 medium zucchini
For the filling:
* 1 lb ground beef
* 1 medium onion, grated or blended
* 1 cup parboiled rice
* 2 tbsp tomato paste
* 1 handful fresh parsley, chopped
* ½ tsp garlic powder
* 1 tsp paprika
* Salt and black pepper, to taste
For the sauce:
* 300 ml boiling water
* 40 g (3 tbsp) butter
* 1 tbsp tomato paste
* 1 tsp salt
* ½ tsp sugar
* ½ tsp dried basil
For serving:
* Shredded mozzarella
* Sour cream
* Fresh parsley
Instructions
Cut each zucchini into 3 equal pieces, about 2 inches tall. Using a spoon, carefully scoop out the centers, leaving the bottoms intact to create little cups.
In a large bowl, combine the ground beef, grated onion, parboiled rice, tomato paste, parsley, garlic powder, paprika, salt, and black pepper. Mix until well combined.
Stuff each zucchini cup with the filling and arrange them upright in a baking dish.
In a measuring cup, whisk together the boiling water, butter, tomato paste, salt, sugar, and dried basil until the butter has melted. Pour the sauce around the zucchini.
Bake at 390°F (200°C) for about 30 minutes. Remove from the oven, sprinkle generously with shredded mozzarella, and return to the oven until the cheese is melted and golden and the zucchini are tender.
Serve warm with a dollop of sour cream and a sprinkle of fresh parsley.
