💕This is my gluten free brownie with no bake strawberry cheesecake. A perfect balance of fudgy brownie and creamy strawberry cheesecake that melts in every bite. Rich, indulgent, and absolutely perfect to celebrate this Valentine’s Day 💕 Ingredients • 170 g unsalted butter • 35 g unsweetened cocoa powder • 130 g brown sugar or coconut sugar • 70 g granulated sugar • 2 large eggs + 1 egg yolk (room temperature) • 1 tsp vanilla extract • ½ tsp salt • 45 g almond flour • 40 g gluten-free 1:1 flour blend • 1 tbsp (8 g) cornstarch • 150 g chocolate chunks or chunks (60–70%) • (Optional) ½ tsp espresso powder Instructions 1. Preheat oven to 175 °C / 350 °F. Line an 8x8-inch pan with parchment paper. 2. Melt the butter until very hot (do not brown). 3. Add cocoa powder directly to the hot butter and mix until smooth. 👉 This blooms the cocoa and deepens the chocolate flavor. 4. Add both sugars and mix well. 5. Let cool slightly for 2–3 minutes. Add eggs, egg yolk, vanilla, and salt. Mix until glossy and thick. 6. Add almond flour, gluten-free flour, and cornstarch. Mix just until combined. 7. Fold in espresso powder (if using) and chocolate chunks. 8. Pour into the pan, smooth the top, and gently tap the pan. 9. Bake 27–31 minutes, until: • the center has a slight give • a toothpick comes out with moist crumbs 10. Let cool completely at room temperature. ⸻ 🍓 PART 2: No-Bake Strawberry Cheesecake Layer Ingredients • 400 g cream cheese, room temperature • 90 g plain Greek yogurt (or 90 ml heavy cream for a lighter mousse texture) • 60 g honey • 40 g powdered sugar, sifted • 2 tsp vanilla extract • 200 ml heavy cream, very cold • 10 g unflavored gelatin • 50 ml cold water • 150 g thick strawberry jam (bright red) Preparation 1️⃣ Gelatin • Mix gelatin with cold water. • Let bloom for 5–10 minutes. • Melt gently and let cool slightly. 2️⃣ Cream base • Beat cream cheese until smooth. • Add honey, powdered sugar, and vanilla. • Mix in Greek yogurt. 👉 Mix until completely smooth and lump-free. 3️⃣ Add gelatin • Slowly pour in gelatin while mixing on low speed. 4️⃣ Whipped cream • Whip heavy cream to soft–medium peaks. • Fold into the cheesecake mixture gently. 5️⃣ Flavor + color • Fold in 100 g strawberry jam. • Reserve 50 g for swirl or topping. ⸻ 🧱 ASSEMBLY 1. Once the brownie is fully cooled, pour the cheesecake mixture on top. 2. Smooth the surface. 3. Refrigerate 4–5 hours, or until fully set. ⸻ 🍫 PART 3: Chocolate Ganache Ingredients • 120 g semi-sweet or dark chocolate (60–70%) • 100 ml hot heavy cream • 1 teaspoon butter Instructions 1. Pour hot cream over the chocolate. 2. Let sit for 1 minute, then stir until smooth. 3. Let cool slightly and pour over the set cheesecake. 4. Smooth gently.
