Breakfast: Granola Breakfast Parfait
Homemade Nut & Seed Granola
(makes approx 6-8 portions of granola)
Ingredients
200g rolled oats (use gluten-free if needed)
100g pistachios, roughly chopped
3 tbsp (45ml) extra virgin olive oil
75ml maple syrup
2 tbsp chia seeds
3 tbsp pumpkin seeds (about 20g)
1 tsp ground cinnamon
Pinch of sea salt
1 large egg white, lightly whisked (optional, for chunkier clusters)
Method
1. Preheat the oven to 160°C fan.
2. Combine all the ingredients in a large bowl, including the egg white if using.
3. Spread evenly onto a lined baking tray, pressing the mixture down slightly.
4. Bake for 18–22 minutes, until golden and fragrant. Stir halfway through for a looser granola, or leave untouched for chunkier clusters.
5. Allow to cool completely before storing in an airtight container.
To serve : Layer with live yogurt or kefir & berries
