Instead of using only spinach, I combined collard greens and spinach for an even heartier texture. Ingredients * Palm oil * Kako * 2 large onions, sliced * Ginger * Garlic * Spring onions * Carrots * Onion (for blending) * Green bell pepper * Scotch bonnet peppers * Diced tomatoes * Tomato purée * Chicken bouillon * Salt * Egyawea Seasoning * Sankofa Stew Seasoning * Ground melon seeds (egusi) * Eggs (for the egusi mixture) * Smoked mackerel * Blanched collard greens * Blanched spinach * Boiled eggs To Serve * Plain boiled rice * Boiled yam * Boiled plantains Method * Heat palm oil in a pot for about 3 minutes. * Add the kako and fry for 2 minutes. * Add the sliced onions, cover, and sauté for 3 minutes. * Add the blended ginger, garlic, spring onions, carrots, onion, green bell pepper, and Scotch bonnet peppers. * Stir, cover, and cook for 10 minutes. * Add the diced tomatoes and tomato purée. Mix well, cover, and cook until the oil settles on top. * Season with chicken bouillon, salt, Egyawea Seasoning, and Sankofa Stew Seasoning. * Stir, cover, and cook for another 7–10 minutes. * Add the mixture of ground melon seeds (egusi) and eggs. * Cover and cook over low heat for 7 minutes. * Stir to combine everything. * Add the smoked mackerel and gently mix. * Add the blanched collard greens and spinach. Stir well and taste for seasoning. * Cover and cook for 5 minutes. * Add the boiled eggs and simmer for an additional 5 minutes. * Serve hot with plain boiled rice, boiled yam, or boiled plantains.
