Welcome to my new series, 10 days of wholesome snacks Day 1: 🍋 Lemony Weetbix slice 🍋 This is the perfect kid and adult friendly snack. I’ve added wholemeal flour, LSA mix, weetbix and coconut to boost the overall fat and fibre in this yummy slice which helps reduce the blood sugar spike. It’s so delicious so be warned haha I recommend cutting into very small slices as the icing makes it very rich. If your goal is fat loss, you could easily half the amount of icing that goes on it as it’s quite a large amount. Lemony Weetbix slice  Makes 24-30 small pieces  BASE 185 grams butter, melted  1/2 cup of sugar 4 Weetbix, crushed 1 cup of wholemeal plain flour 3/4 cup of coconut 1/4 cup LSA mix (or sub for flaxseed meal) 1 teaspoon of baking powder ICING 2 cups of icing sugar 50mls fresh lemon juice  Zest of 1 lemon  45 grams of butter, melted  METHOD: 1. Preheat oven to 180°C and line a baking tray.  2. Melt your butter then pour it into a large bowl. Stir in your sugar. 3. Add in the crushed weetbix, flour, coconut and baking powder. Mix well.  4. Pour into a lined baking tray and press down firmly with the back of a spoon. 5. Bake for 18-22 mins or until it is cooked through but soft to touch. Don’t worry if it still feels a little soft as it will firm up as it cools.  6. Icing: Mix together icing sugar, butter, lemon juice and zest. If it’s too runny, add a little more icing sugar, if it’s too thick, add a little extra lemon juice.  7. Ice the slice then let it cool completely before slicing into small pieces.  8. Store in an airtight container in the fridge or in a cool dry place.  🍋Rough nutrition for 30 slices, per piece: 118 cals, 7g fat, 12g carbs, 1g protein, 2g fibre🍋
