@jazees_recipes: Srilankan Beef Thakkadi 🇱🇰🥘 Ingredients For the beef gravy Oil – 2 tablespoons Onion – 1 large, thinly sliced Rampe (pandan leaves) – a few pieces Curry leaves – a few Green chillies – 2 Cardamom – 2 Cloves – 2 Cinnamon – 1 piece Cumin seeds – 1/2 teaspoon Fenugreek seeds – 1/2 teaspoon Ginger garlic paste – 1 tablespoon Tomato – 1 large, thinly sliced Turmeric powder – 1/4 teaspoon Chilli powder – 1 tablespoon Cumin powder – 1 teaspoon Coriander powder – 1 1/2 tablespoons Salt – 1 teaspoon (adjust to taste) Beef with bone – 500g Water – 1 cup (add more if needed) Coconut milk – 1 cup Coriander leaves – a few For the dumplings Rice flour – 300g All-purpose flour – 50g Grated coconut – 200g Chopped shallots – a handful Chopped green chillies – 2 to 3 Chopped coriander leaves Chopped curry leaves Salt – 1/4 teaspoon Method Heat oil in a pan. Add onion, rampe, curry leaves, green chillies and whole spices. Sauté until the onions soften and the raw smell goes away. Add ginger garlic paste and mix well until the raw smell disappears. Add chilli powder and mix it well with the spices. Add the sliced tomato and cook until it softens. Add the beef, masala powders and salt. Mix well until the beef is coated with all the spices. Add 1 cup of water, cover and cook until the beef becomes tender. Add more water if needed while cooking. While the beef is cooking, prepare the dumplings. In a bowl, add rice flour, all-purpose flour, grated coconut, chopped shallots, coriander leaves, curry leaves, green chillies and salt. Mix everything together. Once the beef is cooked, take some of the beef gravy and add it to the flour mixture. Mix well to form a thick dough. Shape the dough into small dumplings. Using your thumb, gently press the centre of each dumpling to make a small indentation. Bring the beef gravy back to the stove. Add coconut milk and allow it to come to a gentle boil. Add the dumplings and cook for 15–20 minutes until they are cooked through and the gravy becomes slightly thick.
