maybe use a thinner knife, like a fish filleting knife to cut it off the rind, they are a bit more flexible.

That’s always how I cut mine. I plop it, rind and all on a paper plate to eat after slicing

Liam bro, you tried to put the knife through the full width of the width of the slice, doesn't work since it has a curve. Last two cuts you need to keep the knife tip up to just half the wedge.
