Add the egg, garlic, Dijon mustard, lemon juice and oil to a tall jug. 2. Place the immersion blender on the bottom of the jug. 3. Blend without moving for 10–15 seconds until the mixture starts to emulsify. 4. Slowly lift the blender to incorporate the remaining oil until thick and creamy. 5. Season with salt to taste. Bravas Sauce - 60ml extra virgin olive oil - 3 garlic cloves, finely chopped - 1 small onion, finely diced - 1 tbsp sweet smoked paprika - 1 tsp hot smoked paprika or cayenne pepper - 1 tbsp tomato paste - 1 tbsp plain flour - 250ml vegetable or chicken stock - 1 tsp sherry vinegar - Salt, to taste 1. Heat the olive oil over medium heat. Cook the onion and garlic for 5 minutes until soft. 2. Stir in the paprika and tomato paste. Cook for 1 minute. 3. Add the flour and stir for 1 minute. 4. Gradually whisk in the stock until smooth. 5. Simmer for 5–10 minutes until thickened. 6.
