This strawberry pie is one of the best things my aunt ever made!! I have been missing it, but now I have the recipe and so do you!! It tastes like summer. Must serve with freshly whipped cream!! MY AUNT'S FAMOUS STRAWBERRY PIE Crust Ingredients 1½ cups all-purpose flour ½ cup (1 stick) butter, melted 4½ tablespoons sugar ( MY COUSIN MADE ONE AND A HALF'S THE CRUST. I MIGHT TOO BECAUSE IT'S JUST DELICIOUS) Directions Preheat oven to 350°F. Mix the flour, melted butter, and sugar until combined. Pat evenly into a 9-inch pie pan. Bake until lightly golden. Let the crust cool completely, then chill before filling. I like to pop mine in the freezer for about 20 minutes—it works perfectly. Strawberry Filling Ingredients 1 cup sugar 3 tablespoons cornstarch 1 cup water 3 tablespoons strawberry (or raspberry) Jell-O powder 6–8 cups fresh strawberries, hulled and cut in half (or quartered if they're very large) Directions In a saucepan, whisk together the sugar, cornstarch, and water. Bring to a boil over medium heat, stirring constantly. Cook until the mixture becomes thick and clear. Remove from the heat and stir in the Jell-O until completely dissolved. Let the glaze cool slightly. Assemble Arrange the 6–8 cups of fresh strawberries in the chilled pie crust. Pour the glaze evenly over the strawberries, making sure they're well coated. Refrigerate for at least 6 hours, or until completely set. Serve chilled with whipped cream. Tips: If your strawberries are especially large, quarter them for easier slicing and better glaze coverage.
