The honey is not simply “heated up” during uncapping 😉 With the hot air gun, I briefly heat the air pocket between the honey and the wax capping. The air expands and causes the wax capping to pop open. The wax only melts very briefly and then hardens again around the edges of the cells. And scientifically speaking, the statement “heat = damaged honey” is simply far too simplistic. Studies show that potential heat damage depends on both the temperature and the exposure time — not simply on the fact that warm air is briefly passed over a honeycomb. That is precisely why you must not hold the hot air gun on one spot for too long. When used correctly, the method works without unnecessarily exposing the honey to excessive heat. 😉🐝
