@maddoughcookies: Homemade Fudge Rounds Another little Debbie favorite of mine😋 Recipe 1 2/3 cups (200g) all-purpose flour 1/2 cup (45g) unsweetened cocoa powder(or half Dutch, half regular) 1 tablespoon (10g) cornstarch 1/2 teaspoon baking soda 1/2 teaspoon fine salt 11 tbsp unsalted butter, room temperature (156g) 3/4 cup + 2 tablespoons (175g) granulated sugar 1/4 cup (50g) packed light brown sugar 1 large egg (50g) 1 tablespoon (15g) light corn syrup 2 teaspoons vanilla extract Filling: 1/2 cup (113g) unsalted butter, softened 1/4 cup (50g) vegetable shortening 3/4 cup (90g) powdered sugar 2 tablespoons (10g) cocoa powder 1 tablespoon heavy cream 1 teaspoon vanilla extract 1/4 teaspoon salt 2 tablespoons (30g) melted milk chocolate Add more powdered sugar or cocoa powder to thicken it up Chocolate drizzle: 1/2 cup (85g) semi-sweet chocolate chips 1 teaspoon vegetable oil Cream butter and sugars for 1-2 minutes until smooth. Mix in the egg, corn syrup, and vanilla. Add dry ingredients and mix just until combined. Chill dough for 30 minutes. (optional). Scoop 2-3 tbsp of dough, place 6 on a baking sheet. (I made 3 small ones and 3 large sandwich cookies) Beat butter and shortening for 3-5 minutes until very light. Add powdered sugar and cocoa slowly. Add cream, vanilla, salt, and melted chocolate. Whip another 2 minutes until smooth. If the filling is too soft, add a 1-2 tbsp of powdered sugar a time and cocoa powder to balance it out. Or chill it in the fridge *the shortening is what gives it the closest flavor to little Debbie* Melt the chocolate and oil in 20-30 second intervals until smooth. Pipe over one side of each sandwich. Let the cookies rest and chocolate harden or chill in the fridge for 15 minutes. #littledebbie#homemade#cookies#Recipe#baking
