@umpachka23: INGREDIENTS: - 1 pound boneless, skinless chicken breasts, diced - 1 can light coconut milk - 2 tablespoons soy sauce - 2 cups cooked rice (jasmine or basmati) - 2 tablespoons vegetable oil - 2 cloves garlic, minced - 1 teaspoon ginger, grated - 1 teaspoon fresh lime juice - salt and pepper to taste - 1/4 cup fresh cilantro or green onions, chopped DIRECTIONS: 1. Heat oil in a pan over medium heat. 2. Add garlic and ginger, sauté for 1 minute. 3. Toss in chicken, cook for 5-7 minutes until no longer pink. 4.
