@laura.b.healthy: FULL RECIPE⤵️ (You’ll want to save the video so you can follow this recipe later) You need: • 2 ears of corn (or one can) • 1 jalapeño (cut out seeds for less spice) • 1/2 of a red onion • 1 can black beans • 1 can black eyed peas • 1 can rotel • 2 chicken breasts, raw • 1 packet of Mojito Lime marinade from Grill Mates • 1 lime • garlic powder To make: 1. Marinate chicken in the Mojito Lime marinade according to the directions on the packet. Cook chicken and let it cool. 2. If using corn on the cob: place it in the oven (without shucking it) at 450 for 15 minutes. Flip and cook for 15 minutes more then let it cool completely. Shuck the corn and cut it off of the cob. 3. Dice red onion and jalapeño. 4. In a large bowl, combine the corn, jalapeño, red onion, black beans, black eyed peas, and rotel. Stir to combine. 5. Dice cooled chicken and add to the bowl then mix again. 6. Finish off with the juice of the whole lime and a sprinkle of garlic powder. Mix one more time. I like cowboy caviar but I wanted it as a meal instead of a snack or app. Adding the chicken increases the protein and makes this Cowboy Caviar the perfect meal prep lunch!
