As someone with a masters in physics i feel I have the information to explain this. The physical reality is that light propagates through space at specific wavelengths and frequencies. As established in quantum mechanics, a photon at 650 nanometers contains a distinct packet of energy, where energy equals Planck's constant multiplied by frequency. It holds no inherent "redness." In pure objective physics, only the radiation spectrum exists. The human eye intercepts this radiation using specialized photoreceptors called cone cells. Correction, there is color in space. just because it's in a vacuum, does not change the material properties. What I believe you meant to write is "a majority of telescope images start colorless. Thus collected data must be analyzed to determine material composition before having their colors added back, and sometimes we later find out that we were wrong about the color."
