I know it sounds weird, but spreading mayo on, before searing, gives a perfect crust 👌 Avocado oil in the pan, and Unsalted butter after your first flip. Dont knock it till you try it.

From my experience what matters most is having a dry steak. Doing a dry brine over night uncovered creates the best sear

30 minutes wont even raise the temp 3°, it needs to sit out for over a day to get to room temp which will cause it to get spoiled quickly.

Biggest tip for crust = salt brining. You can do it only for an hour if you want and will make a significant difference. Do it overnight and you’ll be amazed how perfect it is.
