I always wonder if something this simple shows enough technical skill, or if it’s “too obvious” to impress anyone. But the truth is, simple ingredients handled well will always win. Lightly poached scallop, seared at the last minute, corn velouté, brown butter, hazelnuts, black truffle. Straightforward, and damn good.
