Berry Vanilla Tartlets🫐 These gluten-free, vegan, healthier and refined sugar-free tartlets are amazing😍 Ingredients (Yields 4): For the Tartlets: * 115g almond flour * 40g buckwheat flour * 30g plant-based protein powder * 30g maple syrup or agave syrup * 45ml coconut oil * 30g nut butter * 35-50ml plant milk For the Vanilla Pudding | Custard: * 200ml + 50ml plant milk * (Optional) 1 cinnamon stick * 15-30g granulated sugar or sugar equivalent of your choice * 20g cornstarch * Pinch of salt * Vanilla extract or paste * (Optional) 1/2 tsp turmeric for color Toppings: * Berries and mint * Mix all the tartlet ingredients, excluding the milk. Slowly add milk until you achieve a soft dough that can be easily shaped. Initially, it may seem dry, but don’t worry, as you add milk, the dough will come together. Adjust with more almond flour if too sticky or add plant milk if too dry. * Divide the dough into 4 portions and press it into pre-greased tartlet molds (I used coconut oil). Use a wax paper strip for easier removal. * Bake for 12-18 minutes at 180°C | 355°F. At 12 minutes, the dough will be soft and slightly golden; at 18 minutes, it will resemble biscuit. Allow them to cool. * Prepare the vanilla custard by heating 200ml of plant milk with the cinnamon stick if using. * While the milk heats, in a bowl, combine the other ingredients, and the remaining 50ml of plant milk. Mix well to eliminate any granules. * Add the mixture to the hot milk, reduce the temperature to low on the stove, and continuously mix to prevent lumps.
