the full recipe is in the caption👇🏼😋 Spring Rolls (Air Fryer) Makes 10-12 Total time: 30 minutes   Ingredients 1 tbsp olive oil 1 shallot, chopped 3 garlic cloves, minced 1 ¼ lbs ground chicken 4 c classic coleslaw mix 1/3 c hoisin sauce 1 tsp tamari or soy sauce 1 tsp rice vinegar 1 tsp sriracha 12 rice paper spring roll wrappers Avocado oil spray   Instructions 1. In a large skillet, heat the olive oil over medium/high heat. Sauté the shallot and garlic for 2-3 minutes. Add the ground chicken and break into small pieces as it cooks. Cook for about 4-5 minutes before adding the coleslaw mix. 2. Allow the coleslaw mix to cook down for 3-5 minutes. As it cooks, set up your rolling station. Set a baking sheet on the counter and fill it with ~1 inch of water. Set a hot pad, clean cutting board and your rice paper wrappers next to the baking sheet. 3. Add the hoisin, tamari, rice vinegar, and sriracha to the chicken and veggie mix. Mix the sauces in thoroughly, then remove from heat. 4. Place the filling skillet onto the hot pad at your rolling station. Preheat the air fryer to 375F. 5. Soak the rice paper wrappers for about 10-25 seconds in the water. I recommend doing two at a time to speed up the process but stagger the timing, so they don’t stay in the water for too long. 6. After soaking the wrapper, it’ll be pliable and easy to use. Lay it flat on the clean cutting board, scoop a heaping ¼ c of filling onto the wrapper, then wrap by folding in the sides on the left and right of the filling, then fold up the bottom, then roll to seal. Set aside. Repeat the process. I did 6 at a time, then started my first batch in the air fryer while I rolled the second batch, and it worked really well for me. 7. Depending on the size of your air fryer, you may need to do fry in batches because you don’t want to overcrowd the basket. I could do 5-6 at a time, so I did it in two batches. Spray the inside of the air fryer with avocado oil, then lightly spray the spring rolls all over. Air fry at 375F for 10-11 minutes, flipping at about the halfway point. 8. For best (and crispiest!) results, serve immediately.
