Hi all, In our Kerala Series today, we are making Kerala Chicken Roast. In this recipe I hv used the fragnant coconut oil from @rainayur , it smells divine 🤌. This is a simplified recipe but it taste so so good. We do not need to add water in this, chicken is supposed to with it excess juices only. Happy trying all 🤗 Kerala Chicken Roast By Sheena Ingredients :- 1 kg chicken 1 cinnamon 3 cardamoms 3 cloves 1 bay leaf 3 onions  2 cm ginger, 5 cloves garlic & 4 cili padi (pounded together) 1 tomato Some curry leaves Some chopper coriander 2 tbs chili powder 1 tbs coriander powder 1 ts turmeric powder 1 ts blackpepper 1 ts garam masala Method :- 1. In a pan, heat up 4 tbs Rainayur Cooking Coconut Oil, add in cinnamon, cardamom, bay leaf and onion 2. Saute well till onion turns brown, sprinkle pinch of salt so tht onion turns brown fast  3. Once onion has caramalised, add in pounded ginger, garlic and green chili. 4. Saute well and add in chili powder, turmeric powder, coriander powder and pepper. 5. Stir well and in chicken 6. Mix well and add in curry leaves and tomato 7. Season with salt 8. Give it a good stir and close with lid 9. Slow cook for 15 minutes 10. Open lid and chicken should be almost fully cooked 11. Add in garam masala and mix well 12. Stir occasionaly till it dries up and roasted well 13. Once chicken is fully, add in coriander leaf and off the heat 14.
