The chef dips the tuna into very hot water for just a few seconds, then immediately transfers it to an ice bath. This technique is called yubiki (湯引き). The result: * The very outside of the fish turns light brown or gray because the proteins have cooked. * The interior remains completely raw. * The ice bath immediately stops the cooking.
