From a biological standpoint, it could be an infectious disease similar to rabies but only effects humans. Transmitted via bites or scratches from others infected. Causes hallucinations, heightened aggression, increased hair growth, rapid metabolism which lead to an unstoppable hunger. Essentially it makes you a feral human.

the transformation process would be more of a Transmogrification process. in nature wilting and regrowth processes does occur. but not as rapidly. bone structures can modify itself into grotesque proportions. skin shedding and hair production growth. it all will be a daunting painful experience. thats why they're beastly and intense creatures.
