Heat oil in a fryer or deep pan. 8. Fry potato slices until golden and crispy. 9. Drain on paper towels, season with salt. 10. Prepare coconut chutney: Blend 1 cup grated coconut, 2 green chilies, a small piece of ginger, and a handful of cilantro with a little water until smooth.
