Today we’re making a… 🥭Mango Tiramisu Cake Tin🥭 The perfect summer dessert, and you guys have to try it! Recipe is below ⬇️ Makes one 8-inch cake (I use a 7.5 inch biscuit tin) Vanilla Sponge 150g self-raising flour 150g caster sugar 150g butter or baking spread (I use @BakeWithStork ) 3 large eggs 1tbsp vanilla paste Mango Milk Soak 200ml whole milk 100ml double cream 75–100g mango purée 25g caster sugar Mango Mascarpone Cream 180g mascarpone 300ml double cream 100g mango purée 50g icing sugar 1 tsp vanilla paste Vanilla Mascarpone Cream 50g mascarpone 100ml double cream 20g icing sugar 1 tsp vanilla paste Mango Filling 100g diced ripe mango 50g mango purée To Assemble 12 ladyfingers Extra mango purée Method highlights: - Bake your vanilla sponge, cool completely, then trim to fit your tin. - Make your mango milk soak and mascarpone creams. - Layer soaked sponge → mango filling → mango mascarpone cream → repeat. - Add milk-soaked ladyfingers on top, finish with a thin layer of plain mascarpone cream. - Chill for at least 2 hours, then decorate with mango purée and mascarpone cream.
