Mince the garlic cloves and pat the pork loin roast completely dry with paper towels. Season the roast evenly with the salt and black pepper on all sides. In a medium mixing bowl, combine the Coca-Cola, dark brown sugar, soy sauce, ketchup, Dijon mustard, Worcestershire sauce, balsamic vinegar, minced garlic, ground ginger, and crushed thyme.
