Yummy!!! My Italian grandmother used to make stuffed Swiss chard and I am so sorry her recipe died with her. One of my favorite memories and foods! No meet-breadcrumbs I believe .. any ideas?? She would make and freeze and to eat heat up drizzle with olive oil and lemon.

Would you try this Mediterranean Chicken & Feta Salad?? These flavors are UNREAL! And if you want to eat healthy but still want food that actually tastes incredible, you have to try this Mediterranean salad. It’s fresh, crunchy, sneaks in solid protein, loaded with herbs, and that lemony Dijon dressing brings everything together. SO GOOD. This makes such a great healthy lunch or easy dinner. Here is how I made it: 1.Let’s start with the base. Grab about 5 oz arugula and give it a good chop. Add it to a large bowl with 4 thinly sliced Persian cucumbers, 1 finely diced small red onion, half a quart of thinly sliced chopped cherry or grape tomatoes, and 3-4 thinly sliced scallions. Then go in with a generous handful of finely chopped fresh mint (about 1/2 cup). You can also add parsley or cilantro here if you like. 2.For the chicken, grab about 1lb chicken. Drizzle with a little olive oil, then season generously with salt, pepper, 1/2 tbsp garlic powder, 1/2 tbsp paprika, 1/2 tbsp oregano, 1/2 tbsp Aleppo pepper or chili flakes, and the zest and juice of a lemon. Mix well. Cook it up on the stove or air fry or bake it in the oven or even grill it, then finely chop in small pieces. 3.While the chicken cooks, roughly chop about 1/2 cup toasted walnuts. 4.For the dressing, add 1/4 cup olive oil to a jar along with the juice + zest of 1 large lemon, 2 tbsp white wine vinegar, 2 tbsp Dijon mustard, 1 tsp oregano, 1 tsp onion powder, 1 tsp Aleppo pepper, and a generous pinch of salt and pepper. Shake really well until emulsified. Taste and adjust as needed. 5.Now bring it all together. Add the cooked chicken to your salad, toss in the toasted walnuts, then add two slabs of feta cheese.  I love using a block of feta and breaking it into larger pieces so you get those creamy bites throughout. Drizzle over the lemony Mediterranean dressing and toss everything really well.
