WELCOME TO MEDITERRANEAN MADNESS 🍋☀️  my brand new summer series where I’ll be showing you how to make some of the best dishes the Mediterranean has to offer this is part 1 and today were starting off with a trip to France, to make some Coq Au Vin 🇫🇷 A rich French red wine stew with carrots, mushrooms and pearl onions! (4) 4 chicken thighs (skin & bone in) 4 chicken drumsticks 600ml red wine (preferably French) 4 bay leaves Handful fresh thyme 3 rashers of smoked bacon 1 carrot sliced 1 brown onion diced 10 mushrooms quarters 3 garlic cloves finely chopped  500m beef stock 50g pearl onions 2 tbsp plain flour 2 tbsp butter Fresh parsley (1) Place the chicken in a large bowl. Add the red wine, 2 of the bay leaves and thyme, cover and marinate for a few hours but better results require an overnight marination. Remove the chicken from the marinade, and pat dry. Place the remaining wine in a saucepan and simmer on a low heat until reduced by half. (2) In a large stew pot, heat up 1/2 tbsp of neutral oil, then add the diced bacon and cook for 3/4 minutes until crispy and its fat has been released, then remove. In the same pan, add the chicken pieces and brown on each side, then remove. (3) Now add the onions and carrots, season with 1 tsp of salt, mix well then cover for 5 minutes. Once soft, add the garlic and cook for a further minute. Now add the diced mushrooms and cook for 2 minutes. Add the bacon back to pan and mix very well. (4) Add the reduced wine, beef stock, thyme, bay leaves and chicken to the pot, bring to a simmer then cover and cook for 25 minutes. In a separate saucepan, heat up some butter and add the pearl onions, cook for a few minutes, then add reserve. (5) Open the lid and place a sieve inside the pot and gradually add the flour whisking into the stew. This will thicken up the stew to your liking. Finally add the onions and chopped parsley, mix well and serve with some mash potatoes, enjoy :) #coqauvin #frenchfood #france #stew #comfortfood #fyp
