The mayo adds moisture, your cast iron skillet has to be seasoned to flip . I’m not sure why yours didn’t rise . Add a lil baking soda

I think your pan was too big for the amount of sugar and butter, too much evaporated. You’re basically making a cornbread banana gateau tatin, don’t skimp on the goo for the fruit topping. Also you can use like any fruit and any cake or pie crust for a similar result.

I use sour cream instead of milk when I make my cornbread casserole. It’s taco meat and corn and pintos and rotel on cooked cornbread cheese and jalapeños on top.
