Ratatouille Recipe🐀🍅🍆🍲 Ingredients For the sauce: • 2 tomatoes (boiled, peeled)  • 2 red bell peppers (charred, peeled)
• 1 small red onion
• 3 garlic cloves  • 2 tbsp olive oil
• Salt & black pepper to taste Vegetables
• 1 zucchini
• 1 yellow squash • 1 small eggplant
• 3 Roma tomatoes
 For garnish:

• Extra olive oil Instructions 1. Prepare the tomatoes & peppers:
• Bring water to a boil and blanch tomatoes for 30 seconds.
• Remove and peel carefully.
• Char the red peppers until blackened, then remove the skin. 2. Make the sauce:
• Heat olive oil in a pan over medium heat.
• Add onion, garlic and chopped peppers. Cook until softened.
• Add tomatoes, salt and pepper.
• Blend until completely smooth.
• Pass the sauce through a strainer for a silky texture.
• Spread evenly into the bottom of a baking dish. 3. Slice the vegetables:
• Thinly slice eggplant, zucchini, yellow squash and Roma tomatoes into even rounds. 4. Arrange the ratatouille:
• Layer the vegetables in a repeating spiral pattern over the sauce.
• Continue until the dish is completely full.
• Drizzle with olive oil and season with salt and black pepper. 5. Bake:
• Cover with parchment paper.
• Bake at 375°F (190°C) for 90 minutes.
• Remove the parchment near the end so the top caramelizes beautifully. 6. Garnish & serve:
• Plate carefully for clean layers.
• Spoon extra sauce around the plate.
