Lunch 🍽️ Chicken, Rice & Beans Prato Feito (School Lunch Style) Ingredients: boneless chicken thighs (bite-size pieces), canned carioca or black beans (rinsed), hot cooked white rice, diced carrot, chopped onion, minced garlic, chopped tomato, chopped cilantro/parsley, olive oil, salt + pepper Instructions: Season chicken with salt + pepper. Dinner 🌙 Baked Fish with Sweet Potato Mash & Vinagrete Ingredients: white fish fillets (tilapia/cod), sweet potatoes, olive oil, lemon, minced garlic, diced tomato, diced red onion, chopped parsley, red wine vinegar, salt + pepper Instructions: Roast fish at 400°F/205°C with olive oil, garlic, lemon, salt + pepper for 10–12 min. Boil sweet potatoes until tender; mash with olive oil and salt. Make vinagrete by tossing tomato, red onion, parsley, vinegar, a little olive oil, salt. Serve fish with mash, spoon vinagrete over the top.
