Back with another Chef Off Duty, where I ditch the chef jacket and just cook for myself. This week it’s a Lemon Butter Zucchini Pasta. Simple, light, and exactly what I need after a long week at the restaurant. Cooked up in the NOOK pan from @Baccarat Australia  THE COOK SHOP™ @MyerAus #ChefOffDuty#BaccaratCookware #TheCookShop - Lemon Butter Zucchini Pasta 200 g spaghetti or linguine 2 medium zucchini, thinly sliced 3 Tbsp unsalted butter 1 Tbsp olive oil 2 cloves garlic, finely sliced Zest of 1 lemon plus juice of ½ lemon 120 g grated Parmesan plus extra to serve A pinch of chilli flakes Fresh basil, torn Salt and black pepper Method Bring a pot of salted water to the boil and cook the pasta until al dente, saving a little of the pasta water. While it cooks, warm the butter and olive oil in a pan until melted. Add the garlic and sliced zucchini and sauté until it softens and picks up a little colour. Tip in a splash of the boiling pasta water along with the lemon zest, lemon juice and chilli. Add the cooked pasta straight into the pan and toss everything together so the sauce coats it. Adjust with a little more pasta water if it needs loosening. Season with salt and black pepper, fold through the basil and finish with Parmesan, chilli flakes and more lemon zest if you like.
