Recipe Name Slow Cooker Garlic Butter Pot Roast Ingredients 1. 3½ lb (1.6 kg) beef chuck roast 2. 2 tbsp olive oil 3. 2 tsp kosher salt 4. 1 tsp black pepper 5. 2 tsp smoked paprika 6. 1 tsp garlic powder 7. 1 tsp onion powder 8. 1 tsp dried thyme 9. 1 tsp dried rosemary 10. 1 medium onion, diced 11. 6 garlic cloves, minced 12. 1½ cups beef broth 13. 2 tbsp Worcestershire sauce 14. 2 tbsp soy sauce 15. 2 tbsp tomato paste 16. 2 tbsp unsalted butter 17. 1 tbsp cornstarch 18. 2 tbsp cold water 19. 2 tbsp chopped green onions for garnish Recipe 1. Pat the chuck roast dry with paper towels and season all sides with salt, pepper, smoked paprika, garlic powder, onion powder, thyme, and rosemary. 2. Heat the olive oil in a large skillet over medium-high heat and sear the roast for 3–4 minutes per side until deeply browned. 3. Transfer the roast to a slow cooker. 4. Add the diced onion and minced garlic around the roast. 5. In a bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, and tomato paste. 6. Pour the mixture over the roast and place the butter on top. 7. Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours until the beef is fork-tender. 8. Carefully remove the roast and let it rest for 10 minutes. 9. Mix the cornstarch with the cold water and stir it into the slow cooker juices. Cook on HIGH for 15–20 minutes until the gravy thickens. 10. Slice or shred the roast and return it to the rich garlic gravy, coating every piece. 11.
