A federal class-action lawsuit was filed against McDonald’s in January 2026 alleging the name “McRib” is deliberately misleading — because the sandwich contains no rib meat whatsoever. The patty is a “restructured meat product” — a technology developed by a University of Nebraska professor. His 1995 paper described the process: pig trimmings including tripe, heart, and scalded stomach are mixed with salt and water to extract proteins that bind the scraps together, then moulded into the shape of a miniature rack of ribs. McDonald’s denies using organs. The shape is marketing.
