It looks like she used Blueberries in her smoothie as well. Blueberries have a natural pectin thickening agent thing in them. When making blueberry jam I never have to use added Pectin.

Pomegranate seeds won’t do that but blueberries will. From the looks of her smoothie, I’d say there’s blueberries in it

she added another fruit that's high in pectin to the smoothie before adding the pomegranate

maybe she meant chia and just mixed up the names of the two seeds by mistake? I've gotten that effect from adding too much chia

blueberries and currants are the only fruits I know to gel reliably every time they are blended (I work in a lab we blend a lot of fruits and veggies for analysis)

I've gotten fresh batches of homemade jelly and it's still runny until I've refrigerated it, could that be it? Also, we probably need to know what else is on that smoothie that might have helped it gel.

If I’m not mistaken you usually have to cook the thing with pectin for it to turn into a jam or jelly.

Heating them and letting them cool will bring out the pectin, this is how jams were made

Unless she's cooking her smoothies, its not the pectin. Pectin needs to be cooked in order to thicken things.

Doesn't the pectin need a certain level of acidity and sugar to coagulate?
