I love all three 😇 ➡️ Recipe: Cambodian Red Curry— - [ ] 1 whole chicken, butchered into bite size pieces  - [ ] 1/2 cup minced chili paste  - [ ] 1/2 cup Lemongrass paste  - [ ] 3-4 tbsp curry powder, or to taste - [ ] 2 large onions, large diced  - [ ] 4 aubergine or eggplant, sliced in half then 3 inch cuts  - [ ] 4 Japanese potatoes, peeled cut into 2 inch chunks  - [ ] 1/2 lb Green beans, cut in 3 inch pieces  - [ ] 2-3 tbsp palm sugar, or to taste  - [ ] 2 - 17.8 oz Coconut milk cans (roughly 4 1/2 cups) - [ ] 5 cups water - [ ] 1/2 cup Fish sauce, or to taste  - [ ] Cooking oil Minced chili paste: 8-10 dried chilies, I use guajillo Hot water  Lemongrass paste— - [ ] 2 lemongrass stalks, thinly sliced - [ ] 2 shallots, medium, peeled and chopped - [ ] 3 garlic cloves, peeled and chopped - [ ] 2 kaffir lime leaves  - [ ] 1 inch turmeric root, frozen or fresh  - [ ] 1-2 Thai chilies  1. Soak dried chilies in hot water for at least 4 hours or in room temp water overnight. Strain. In a food processor, blend until chilies turn into a paste.  2. Combine all ingredients for lemongrass paste in a food processor and blend until it becomes a paste  3. Stir fry chili paste, lemongrass paste and curry powder in cooking oil until aromatic.  4. Add chicken and mix well until all the chicken is coated with paste mixture and seared on each side.  5. Combine onions, eggplants, sweet potatoes, and green beans.  6. Pour in coconut milk and water. Mix well. Bring to a boil and then bring down to a simmer for at least 1 1/2-2 hours or until desired consistency of vegetable texture. I  like mine almost mushy 😬 7. Enjoy with, French baguette, rice or vermicelli noodles.
