Ingredients * 4 eggs, boiled @dannykambutchery * 2 cups basmati rice * 2 onions * 2 tomatoes * 2 green chilie )optional) * 1 tbsp ginger-garlic paste * 1/2 cup plain yogurt * 1/4 cup chopped mint leaves * 1/4 cup chopped coriander leaves * 2 tbsp oil or ghee Whole spices * 1 bay leaf * 1 cinnamon stick * 3 cloves * 3 green cardamoms * 1 tsp cumin seeds Spice powders * 1 tsp turmeric * 11/2tsp red chili powder (optional) * 1 tsp coriander powder * 1/2 tsp garam masala * Salt to taste Instructions 1. Wash and soak the basmati rice for 20 minutes. Cook it until it’s about 90% done, then drain. 2. Heat oil or ghee in a heavy bottomed pan. Add the whole spices and cumin seeds. Sauté until fragrant. 3. Add fried onions 4. Stir in ginger-garlic paste and cook for 1 minute. 5. Add tomatoes, green chilies, turmeric, chili powder, coriander powder, garam masala, and salt. Cook until the tomatoes become soft. 6. Mix in the yogurt, mint, and coriander leaves. Cook for 2–3 minutes. 7. Make shallow cuts on the boiled eggs, lightly fry them (optional), and coat them in the masala. 8. Layer the cooked rice over the egg masala. Sprinkle a little mint, coriander, and 1 tbsp ghee on top. (Optional if you do not have it skip) 9. Cover tightly and cook on low heat for 15 to 20min until ready #tupikenadannykam #fyp #kamwari
