Light, golden and gone in minutes. MAKES 12 | PREP 20 mins | COOK 10 mins INGREDIENTS 80g unsalted butter, melted and cooled, plus extra for brushing 150g (1 cup) white flour, sifted 4 eggs 2 tbsp olive oil 1/2 tsp baking powder 2 tbsp milk 15g fresh basil, finely chopped 40g sun-dried tomatoes, thinly sliced 40g Camembert, cut into small cubes STEPS ⭐️Brush a 12-hole madeleine (or muffin) tin with soft butter and refrigerate. ⭐️Beat the eggs, then mix in the flour, baking powder, olive oil and milk. Stir in the melted butter, season with salt and pepper. Chill for 1 hour or overnight. ⭐️Preheat oven to 220°C fan. Fold in the tomatoes, Camembert and basil. Fill the tin three-quarters full. ⭐️Bake 3 minutes, drop to 180°C and bake another 7 minutes until golden. Cool on a wire rack so they stay crisp. STORAGE: airtight container in the fridge 2-3 days, or freeze up to 3 months. Bon App!
