Knead 6–8 min until smooth. *Dough should be soft, slightly tacky, not dry. 3) Add strawberries Fold in crushed freeze dried strawberries during the last minute of kneading. 4) First rise Cover and let rise 1–1½ hours until doubled. 5) Make shortcake crumble (while it rises) Mix flour, sugar, cold butter, pinch salt until crumbly. Bake 350°F for 8–10 min until lightly golden. Cool. 6) Make filling Mix soft butter, brown sugar, cinnamon and cocoa. 7) Roll dough into a 12×18 rectangle. Spread filling. Spoon strawberry preserves in small dollops. Sprinkle shortcake crumble. Roll tightly and cut into 9–12 rolls (fishing wire works best). 8) Second rise (in pan) Cover and proof 20–30 min until puffy and rolls are touching. 9) The secret step Pour ½ cup WARM heavy cream around the rolls right before baking. 10) Bake Bake 350°F for 25–30 min until lightly golden. 11) Glaze Whip glaze ingredients until smooth.
