Homemade Meatballs and Marinara  Make the Meatballs  Ingredients; * 1c buttermilk * 1 egg * 4-6 sliced of bread, cubed (i find that regular white bread works best) * 11/2c parmesan, grated * 1/3c parsley, chopped * 2Tbsp garlic, minced * 1 Tbsp lemon juice  * 1Tbsp salt * 2tsp black pepper * 1lb 80/20 ground beef * 1lb 80/20 ground pork Directions: Add buttermilk, egg, and bread into a bowl and mix until bread is hydrated and mushy. Add parm, parsley, garlic, salt, pepper, lemon juice, and meats.  Mix together until just combined. Try not to over mix. Divide meat mixture into roughly 15 three and a half ounce pieces, roll into balls, and place on a parchment lined sheet tray. Bake at 400 for 20 min until beginning to brown. Remove from oven and lower oven temp to 325 degrees. Let meatballs rest while making the marinara.  Everyday Marinara Ingredients: 1/3 Cup Olive Oil 1 finely diced medium sized yellow onion 3-5 cloves minced garlic 1 tablespoon salt (+/-) 1 teaspoon sugar 2 large cans of high quality crushed tomatoes Directions:  Heat a large stockpot over medium heat and add the olive oil. Once that is warmed, add onion and a pinch of salt to sweat the onions. When the onions begin to become translucent, add the garlic. Once those are both beginning to soften, add crushed tomatoes and taste for salt. Also add the sugar which is needed to cut the acidity inherent in tomatoes. Bring to a simmer and reduce by about 1/3, until your desired consistency is reached. Check again for seasoning. Finishing the meatballs and marinara:  Gently lower cooked meatballs into Dutch oven or heavy pot with marinara and stir gently to coat.  Return pot of sauce and meatballs into 325F oven and cook for 30-45min. When finished, the sauce should be nicely concentrated with browned edges. #meatballs #marinara #italianfood #EasyRecipe
