Pirashki goosht is a stuffed dough pastry with ground beef and veggies. It's my absolute favourite comfort food packed with flavour, crispy exteriors and a juicy filling.  Back home in Iran we normally fry them. Many countries have different variations of this♥️ Ingredients Dough: 4 cups all purpose flour 1 tbsp granulated sugar 1 and 1/2 tsp salt 1/2 tsp baking powder 1 whole egg 1/4 cup vegetable shortening 1/2 cup unsalted butter 1 cup and 2 tbsp cold water Filling: 1 and 1/2 pounds lean ground beef 4 tbsp olive oil, divided 1 large onion 1/2 of a green bell pepper 1 cup chopped cremini mushrooms 1 small red chilli, finely minced (optional) 2 tbsp tomato paste 2 tbsp lemon juice 1 tbsp saffron water 1 tsp salt 1 tsp turmeric 1/2 tsp black pepper 1 cup grated marble or mozarella cheese Instructions For the dough:  in a large bowl add flour, sugar, salt, baking powder, egg, shortening, grated cold butter. Mix with hand and gradually add the cold water. All the ingredients need to be cold! The dough will look rough it's ok, that's how it's supposed to be. Knead, form into a ball, and let it rest in the fridge for 30 minutes while making the filling. Filling: Preheat a large pan on medium heat. Add 2 tbsp of olive oil and the diced mushrooms. Cook for 5 minutes and stir. Add the diced green pepper and red chili pepper. Continue to stir and cook for 5 minutes. Set aside in a bowl. Add 2 tbsp of olive oil, and the diced onions. Caramelize for 10 minutes on low heat. Set aside. On medium-high heat, add the ground beef and cook until browned and the fat disolves (8 minutes). Stir every minute to break it down. If theres a lot of fat that remains, scoop it out with a spoon. (We cook the beef seperately because it releases a lot of oils and fats that will affect the flavour of pirashki.) Add back in the onions, pepper/mushroom, tomato paste, salt, pepper, turmeric, lemon juice, saffron water. Stir and cook on medium-low heat for 10 more minutes. Preheat a large pan with vegetable oil for frying.  Roll out the dough and use a large cookie cutter to cut circles. Then roll out those circles again. Add the filling, cheese, and seal tight. Press down the edges with a fork. Add the pirashki into the oil and fry each side until golden brown.
