as someone who worked in accounting for restaurants for a bit, food does not make money. $18 cocktails on the waterfront make money (this was 10 years ago, they would be $24 now at least). every Michelin star chef was constantly on the verge of failure and every bro bar owner was living it up.

As a chef I always dreamed of owning a restaurant and building a menu. It’s a horrible dream and I’ll never do it. Not even attempt. It’s a money hole that will always be scraping by and it’s your WHOLE existence.

There’s a reason I talk anyone coming to me out of running restaurants. We have three and basically break even. It’s an awful business. The general public sucks and landlords suck any profit left. Only reason to even consider starting a restaurant is undying passion while owning the building
