Batter recipe here(this works with many kinds of fish, the cross section is done with cod) 200g plain flour 200g white rice flour, plus extra for dusting 1 tsp baking powder 1 tbsp honey 300ml vodka 300ml lager 2-3 litres groundnut oil (for frying) 4 large turbot fillets but you can use other fish like cod/halibut/dory etc Salt and freshly ground black pepper https://www.gq-magazine.co.uk/article/fish-and-chips-recipe

I find it fascinating how food travels around the world. You had normal fish and chips in the UK with batter from Portugal. Then the Portuguese take batter to Japan, they make it even better then heston uses tempura techniques on his fish and chips. 👍

you know what funny? aside from the siphon the street vendors in Mexico selling fish tacos by the beach do all those same steps for their batter :)
