Mix in oil, then gently fold in the flour until just combined (don’t over mix). Fold in the chocolate chips. Spread batter into the prepared pan. Bake for 30-40 minutes until a toothpick inserted near the center comes out with moist crumbs (not wet batter). Let the brownies cool completely. Melt the caramel, cream, and butter together in the microwave in 20-second intervals, stirring in between until smooth.  Mix in the peanuts.  Spread over the cooled brownies. Chill while you make the ganache. To make the ganache, melt the chocolate and heavy cream together. Microwave in 15-second intervals, stirring in between until smooth. Stir in the butter until melted and glossy. Let this cool.  Spread over the caramel peanut layer. Chill briefly so the top can firm up.
