Here is my mom’s recipe for stuffed vegetables, Turkish style😊 DOLMA RECIPE: Filling • 1 cup short-grain rice (rinsed) • 1 lb ground beef • 1 medium sweet onion, finely chopped • 1 tomato, peeled & finely chopped • 1 small bunch parsley, finely chopped • A few sprigs fresh mint, chopped (or 1 tbsp dried) • 2 tbsp tomato paste • 2 tbsp red pepper paste (tatlı biber salçası) • 1 tsp sweet paprika (tatlı toz biber) • 1 tsp pul biber (or Aleppo pepper) • Salt & black pepper to taste • 1 tbsp chicken bouillon (optional, for extra flavor) • 2 tbsp olive oil • 2 knobs butter Mix everything except rice first — then gently fold in the rice at the end so it doesn’t break Sauce (to pour on top before baking) • 1 grated tomato • 1 tbsp tomato paste • 1 tbsp red pepper paste • 1 cup chicken broth • 1 tsp chicken bouillon (optional) • 2 tbsp olive oil Pour the sauce over your stuffed veggies of choice. Top veggies with minced garlic and dried mint Cover with a lid or foil, bake at 375°F for ~1 hour or until the rice is cooked.
