It is the kind of old school soul food that fills the whole house with a good smell and pulls everybody to the table early. Serves 4 | Total time about 2 hours 15 minutes INGREDIENTS 4 whole turkey wings (about 3 to 3.5 lbs), split at the joints 2 teaspoons salt 1 teaspoon black pepper 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon smoked paprika 1/2 cup all-purpose flour for dredging, plus 3 tablespoons for the gravy 1/4 cup vegetable oil 1 large onion, sliced 1 green bell pepper, sliced 3 cloves garlic, minced 3 cups chicken broth 1 teaspoon dried thyme INSTRUCTIONS 1. Preheat oven to 350 F. Pat the wings dry and season with the salt, pepper, garlic powder, onion powder, and paprika. 2. Dredge the wings in the 1/2 cup flour and shake off the extra. 3. Heat the oil in a large oven-safe skillet or Dutch oven over medium-high. Brown the wings 3 to 4 minutes per side, then set aside. 4. In the same pan, saute the onion and bell pepper 4 to 5 minutes. Add the garlic for 1 minute, then stir in the 3 tablespoons flour and cook 2 minutes. 5. Slowly whisk in the chicken broth until smooth, add the thyme, and bring to a simmer. 6. Return the wings, spoon the gravy over them, cover, and bake 1.5 to 2 hours until fork tender and the meat reaches at least 165 F inside. Rest 5 minutes and serve over rice.
