@cheff.omi: Twix Stuffed Chocolate Chip Cookies 🍪🍫 Cookie Dough: * ½ cup (113 g) unsalted butter, softened * ⅓ cup (67 g) granulated sugar * ½ cup (150 g) packed brown sugar * 1 large egg * ½ tsp (2.5 g) vanilla extract * ½ tsp (2.5 g) baking soda * ¼ tsp (1.5 g) salt * 1½ cups (186 g) all-purpose flour * 1½ cups (255 g) chocolate chips Filling: * 8 fun-size Twix bars (about 170 g), cut in half * ¼ cup (75 g) thick caramel sauce Chocolate Bottom: * 1 cup (170 g) milk chocolate melting wafers or melting chocolate, melted Topping: * 2–3 fun-size Twix bars (about 60 g), chopped * 2 tbsp (30 g) caramel sauce, for drizzling 🍪 Instructions: In a large bowl, cream together the butter and both sugars until smooth and creamy, then add the egg and vanilla extract and mix until combined. Add the flour, baking soda, and salt and mix until just combined, leaving a few flour streaks, then fold in the chocolate chips. Freeze the dough until firm enough to roll. Scoop the cookie dough into balls and flatten slightly into discs. Spoon about 2 teaspoons (10 g) of caramel sauce into the center and place half of a fun-size Twix bar on top, then wrap the dough around the filling and roll until fully sealed. Bake at 350°F (175°C) for 12–15 minutes, or until the edges are lightly golden. Let the cookies cool completely, then dip the bottoms into the melted chocolate and place them on parchment paper until the chocolate hardens.
