First thing prep fish by Scaling and gutting the red snapper properly prevents fishy flavors. Scale the fish from tail to head, trim the fins, and slit the belly from the vent to the gills. Remove the guts, scrape the dark bloodline along the backbone, rinse with cold water, and pat completely dry before cooking. Step 2. Now make 3 slices on each side, season with olive oil, garlic paste, sazon, adobo, shrimp bouillon, salt, lime pepper, onion powder. Step 3. Marinate for 15 minutes while you get pot with oil ready. Get oil to 350 while on high then set heat to medium. Step 4. Next lightly or heavy coat (for extra crisp) in flour or cornstarch and fry for 4 to 5 minutes on each side to finish this delicious recipe. Note : To keep fried fish crispy, never place it flat on plates or paper towels. Transfer freshly fried fillets to a wire cooling rack set over a baking sheet.
