@gidsgids: Picadillo AKA Giniling Ingredients: 1 lb ground beef 1/3 cup onions, diced 2 cloves garlic, minced 1 potato, small dice 2 carrots, small dice 2-3 tsp fish sauce or to taste 1 (8oz) can tomato sauce 2 roma tomatoes, chopped 1/4 cup raisins 1/2 beef bouillon cube 1 tsp black pepper 1/2- 3/4 cup water 2 tsp garlic powder 2 tsp soy sauce 1 tsp sugar 1/3 cup olives, drained 1/3 cup green peas Boiled egg, for garnish Thai chili pepper, for garnish Instructions: 1. Saute the onions for 1-2 minutes. Season with a pinch of salt. 2. Add the garlic and saute for 1 more minute. 3. Add the ground beef and cook until lightly browned. 4. Add the fish sauce, tomato sauce, chopped tomatoes, black pepper, diced potatoes & carrots, and water. 5. Simmer for 15 minutes with the lid on. 6. Add the garlic powder, soy sauce, olives and frozen green peas. 7. Cook for 2 more minutes. 8. If it gets too dry, add a little bit of water. 9. Garnish with boiled egg and Thai chili pepper. This is basically a picadillo which is made in many Latin American countries. I guess the addition of fish and soy sauces makes it Filipino. I'm Mexican and I think I'm going to try that next time I make it. To be honest, I think that the salty olives with the sweet raisins will make it extra delicious. I'm already salivating

Wow very interesting bc I learned to make it completely differently for my pinay! For starters I use WAY more sweet onion and garlic, ground pork instead of beef, then I deglaze the pan with Tuba (spiced coconut vinegar) and season with dark soy sauce, MSG, achuete (annatto powder) and brown sugar. After that I put in diced chayote, frozen mixed veggies (carrot, peas, green beans, corn) and golden raisins, then just add a bit of water (sometimes broth) and simmer for about 15-20 minutes until tender & sauce/gravy has thickened slightly. So no tomatoes, potatoes or olives in our version! I think yours is more of the "Spanish variety". My wife despises the Spanish influence in Filipino cuisine though (due to their brutal colonialization of the Philippines) so we try to stick to more indigenous versions (Ilocano in this case) of Filipino recipes. But yeah, Giniling is SO SO SO freakin good! I cook it at least every 2 weeks and everyone in our family (even friends & neighbors) gobble it up quick! 😁

always interesting to see how dishes like this change as they travel around the world. Clearly had to have been a spanish dish originally, hence why it made its way from the Caribbean to the Philippines
