Jerk-spiced lamb ribs, pumpkin rice, and a fresh little salad😮‍💨 This is what recovery looks like in my kitchen. Food made with love is the best way to reset after a full week of running and gym Pumpkin rice: 1 tbsp coconut oil 170g pumpkin, shredded and diced  1 small onion, diced   2 spring onions, 1 whole, 1 sliced  3 cloves garlic, minced  8 thyme stalks  1/4 scotch bonnet, minced (optional) 1 tsp crushed pimento + a few whole  1 tbsp green seasoning  250ml coconut water (50g coconut milk powder mixed with 190ml water) 1 Pumpkin soup mix 1 tsp chicken bouillon powder  400g basmati rice  375-400ml water  1.5 tbsp butter  Method: 1. Sauté your onions, spring onion slices, garlic, half your thyme, scotch bonnet, and crushed pimento.  2. Cook for 2-3 mins or until everything has started to soften. Then add in your pumpkin cubes, season with salt, and cook for a further 3-4 mins.  3. Now add in your coconut milk, green seasoning, and the shredded pumpkin into the pan along with your shredded pumpkin.  4. Cover and allow to cook for 5-7 mins on low-medium heat or until the pumpkin cubes have softened.  5. Next, add in your pumpkin soup mix (sieved), chicken stock powder, washed and soaked rice, a few pimento seeds, remaining thyme, spring onion, and butter.  6. Stir, add your water, and then bring to a boil before dropping the heat to low and leaving to steam covered for 30 mins.  7. After 30 mins, fluff up your rice, cover, and remove from the heat. Let this steam for 10 more minutes, and you’re done.  Ribs: 1.4kg lamb ribs  1 tsp salt   2 tsp all-purpose seasoning 1 tsp dry jerk seasoning  1-2 tsp soy sauce  2 tbsp jerk marinade  1 tbsp green seasoning Dry thyme  Dry chilli flakes  Honey  Method: 1. Season with all the listed ingredients minus the thyme, chilli flakes and honey.  2.  Place onto a lined tray. Add 75ml water to th bowl that had the meat, swirl this around and pour over your meat.  3. Cover with foil, then leave to cook for an 1 and a half at 150°c  4. Turn your ribs over and drizzle with honey. Finish with a little dry thyme and chilli flakes.  5. Roast until they’re sticky and slightly charred.
